A PERTH researcher is working on a method of tracing pork offal products back to sole farms by analysing constituent trace elements.

Forensic chemist Natasha Kreitals is conducting the enquiry for a PhD thesis, and to help preserve the reputation of Australian pork products on the universal market.

She said her work, which she is undertaking at the UWA, would complement an existing database of bit-elemental signatures for pork muscle tissue.

“Bioaccumulation of vestige elements differs between offal and muscle, so direct comparisons to the database are unsound” she said.

Ms Kreitals is working on a method whereby an organ product’s record-elemental signature could be mathematically extrapolated back to muscle tissue statistics already present in the database.

She has been studying abattoir samples of muscle, fa, heart, stomach, kidney and liver tissues.

She said she began by drying subsamples of all fabric types which were digested initially in nitric acid (HNO3), a method employed by previous researchers studying muscle tissue.
